If there’s one thing I can’t live without, it’s peanut butter. I have it on toast in the morning, with my apple in the afternoon, and would have it for dinner if Jordan would be okay eating it too.
One of my favorite ways to incorporate it is in these energy bites! They are super easy to make and are great for an afternoon snack, post-dinner dessert, or pre-/post-workout.
I’m going to forewarn you though, when I cook or bake, I don’t really abide by measurements and instead go by my tastes. So in order to share this recipe, I did measure things out but feel free to make adjustments to your own tastes as well!
No Bake Peanut Butter Energy Bites
Yields: 20 bites | Prep time: 10 mins | “Cook” time: 1 hour | Total time: 1 hour 10 mins
1 cup oatmeal
1/2 cup peanut butter
1/4 cup coconut flakes
1/4 cup mini chocolate chips
1/8 cup chia seeds
A drizzle of honey
A splash of flax seed oil
- Combine all ingredients together in a large mixing bowl
- Using a tablespoon, form mixture into bite-size balls and lay out on a cookie sheet or cutting board (whatever flat surface available!)
- Let energy bites set in the fridge for about an hour
